Fresh Vs. Dried Herbs


Have you ever wondered, if using dried or fresh herbs mattered? Why is it that some recipes call for fresh, while others say dry? In reality, the answer is yes, and no. When you dry herbs, the herb loses volume due to water loss. With that being said, you will want to adjust quantity of the herbs used.

There are herbs, that just taste better when you use the plant vs thy dried herbs. Basil, Cilantro, and Parsley are just so much better fresh off the plant. The bold flavor from these plants pack a punch when you, use them fresh. A rule of thumb, when using the dried herbs, cut the required amount in half. When you dry the herb you increase the oils in the plant. It is no longer diluted from the water you extracted.
